"Il Mio Lambrusco" di Camillo Donati è una delle interpretazioni più autentiche e fedeli alle antiche tradizioni del territorio emiliano del Lambrusco. Questo storico rosso ritrova in quest’etichetta tutta la sua genuina nobiltà contadina, di vino dal carattere schietto e immediato e di piacevolissima beva. Il vino "Il Mio Lambrusco" nasce nella zona di Felino, a sud di Parma. È in questa splendida terra dalle grandi tradizioni eno-gastronomiche, che Camillo Donati ha deciso di ridare dignità e valorizzare le migliori qualità di un vino troppo spesso banalizzato con interpretazioni di scarso livello. La tenuta di Camillo Donati è una realtà di carattere familiare, che da tre generazioni produce bottiglie artigianali. Si estende complessivamente su una quindicina di ettari, divisi in due appezzamenti principali, uno a Sant’Andrea di Barbiano e l’altro a Vidiana. Si tratta di una zona collinare con altitudini comprese tra i 250 e i 300 metri sul livello del mare, gestita secondo i principi dell’agricoltura biologica, nel massimo rispetto dalla naturale biodiversità, senza utilizzo di concimi e diserbanti chimici. La Malvasia, la Barbera e soprattutto il Lambrusco, hanno trovato le condizioni ideali per esprimere uve di eccellente qualità. Il lavoro in cantina si limita a intervenire il meno possibile nei processi di vinificazione, con la consapevolezza che solo in questo modo si riescono a ottenere grandi espressioni di terroir. Il rosso "Il Mio Lambrusco" di Camillo Donati è realizzato con Lambrusco della varietà Maestri in purezza. Le uve sono avviate alla fermentazione spontanea con lieviti indigeni in serbatoi d’acciaio inox a temperatura controllata. La seconda fermentazione si svolge in bottiglia, secondo il Metodo Ancestrale, senza dégorgement. Nel calice ha un colore rosso rubino intenso, con un’effervescenza moderata e una spuma soffice e leggera. Al naso sprigiona profumi di violetta, piccoli frutti a bacca scura, sentori di sottobosco e di erbe officinali. Il sorso è vivace e gioioso, con un frutto croccante e tannini sottili. Il finale è caratterizzato da una vibrante freschezza, che chiude su sensazione sapide e fruttate.
